Bitter gourd is known for its unique bitter taste due to the presence of the chemical compound Momordica. If you don’t like the taste, deep frying will reduce the bitter taste but once you acquire its taste, you will enjoy its taste.


Though this dish is not big on health benefits as its deep-fried, it makes it bearable for people who are tasting bitter gourd for the first time. You can eat this along with rasam, sambar curry with rice.


This recipe is very easy and can be cooked with a handful of ingredients which makes it a quick side dish to go for .

How to make Bitter gourd fry | Pavakkai fry


Step 1:

Wash the bitter gourd and cut it into slices

Marinate the slices with 1/2 tsp red chili, 1/4 tsp pepper powder, 1 tbsp curd, 1 tbsp rice flour, 1 tbsp gram flour, and 1/4 tsp salt and leave it for an hour


Step 2:

Heat the pan and add 2 tbsp of oil

Now add the marinated slices in batches and shallow fry in medium flame

Flip the slices and cook both the sides until it turns golden brown.(be careful not to burn the slices)


Step 3:

Once its fried completely, sprinkle some salt, red chili, and chat masala. Mix well and saute in low flame for a couple of seconds.

Then switch off the flame and cover the pan with a plate. Shake it well so that the masala is mixed completely.

Remove from the pan and serve it with any main dish

Ingredients

Marination

  • 1 Medium Bitter gourd/karela/Pavakkai
  • 1/2 tsp Red chili powder
  • 1/4 tsp Black pepper powder
  • 1/4 tsp Salt
  • 1 tbsp Curd
  • 1 tbsp Rice flour
  • 1 tbsp Gram flour

Frying Marinated bitter gourd

Instructions
