Homemade chicken momos recipe
Chicken Momos, a popular street food in India, has its roots in Tibet and Bhutan. Additionally, this delightful dish bears a striking resemblance to dumplings from China and is believed to have spread through the caravan routes connecting the Central Asian steppe to both the East and West.
Momos are made by steam-cooking chicken stuffing wrapped in wheat or all-purpose flour dough. For a healthier alternative, one can opt for wheat flour instead of all-purpose flour, or maida.
With numerous variations available, such as schezwan momos, fried momos, and veg momos, the traditional momos remain plain and are steam-cooked to perfection.
Momos are usually served with the popular red momos chutney and white sauce.
How to cook chicken momos
Step 1: Making the dough
• In a bowl, add maida and salt, and mix them well
• Gradually add water in small quantities to the bowl while kneading the dough. Continue kneading until the ingredients come together to form a smooth, cohesive ball of dough.
• Now, cover the dough with a damp cloth to keep it moist, and let it rest for 10 minutes. This resting period allows the gluten to relax, making it easier to roll out the dough later.
Step 2: Stuffing
• In a bowl, add the minced chicken. You can either boil some chicken pieces and grind them to form a coarse paste, or use raw chicken, mince it, and add it to the stuffing.
• Next, incorporate pepper, salt, onion, ginger garlic paste, and coriander leaves into the bowl with the minced chicken.
• Mix all the ingredients thoroughly, ensuring they are well combined.
• Keep the chicken stuffing aside for later use.
Step 3: Pressing the dough
• Take the rested dough and roll it into a long cylindrical form. Then, cut it into equal pieces and set them aside.
• Take one of the pieces and roll it out using a rolling pin to form a thin, circular wrapper.
• Repeat the process for all the pieces and set the wrappers aside.
• Now, for a neat and uniform shape, use a round mold to cut each rolled-out wrapper into a perfect round shape.
• Do the same for the rest of the pieces. Keep it aside
Step 4: Making momos
• Take one of the pressed and round-shaped dough pieces. Place a small ball of the prepared chicken stuffing in the center of the dough.
• Now, carefully seal the ends of the dough using the pleating method. To do this, hold the dough with one hand and use your other hand to fold and pinch the edges together, creating small pleats along the seam. Alternatively, you can use a fork to press the two ends of the dough together to seal it firmly.
• Repeat the same process for the rest of the dough and the chicken stuffing, creating equally sized momos.
Step 5: Steaming the momos
• Take a steamer and fill it with some water. Bring the water to a boil.
• Now, place the assembled momos on the plate provided in the steamer. Ensure that they are spaced apart to prevent sticking during the cooking process.
• Close the steamer with its lid and allow the momos to steam-cook for 5 to 7 minutes.
• After 5 to 7 minutes, switch off the flame and carefully remove the cooked momos from the steamer.

Sure. Just make sure the chicken is cooked while steaming. Preferably, steam on medium flame.
