Ingredients for south Indian chicken biryani :

  • 8 tsp Oil
  • 2 Bay leaf
  • 3 Cloves
  • 1 Dried kapok bud
  • 3 Cardamom
  • 1 Cup Sliced onion
  • 1 tbsp Ginger garlic paste
  • 1 1/2 tsp Red chilli powder
  • 1 1/2 tsp Salt
  • 1/2 tsp Garam masala
  • 1/4 cup Mint leaves
  • 1/4 cup Coriander leaves
  • 1/2 Cup Sliced tomato
  • 3 tbsp Curd
  • 300 Grams Chicken
  • 2 Cups Water
  • 1 1/4 Cup Basmati rice
  • 2 tbsp Ghee
  • Few Chopped coriander leaves

Preparing rice and chicken for the biryani:

1. Soak the basmati rice for 30 minutes.

2.Wash and clean the chicken before starting to cook.

Step 1:

• In a cooker or a thick-bottomed pan, add 2 Bay leaves, 3 Cloves, 1 Dried kapok bud, and 3 Cardamom. Sauté the spices until they become aromatic, releasing their delightful flavors.

• Next, add 1 cup of sliced onions to the pan. Cook the onions until they turn translucent, infusing the air with their sweet aroma. Toss in 3 green chilies for an added touch of spiciness.

Step 2:

• In the same pan, when the onions and green chilies are cooked to translucency, add 1 tbsp of ginger garlic paste. Mix it well with the onions and cook until the raw smell goes away, allowing the flavors to meld together.

• Next, add the masalas to the pan. Mix in 1 1/2 tsp of red chili powder, 1 1/2 tsp of salt, and 1/2 tsp of garam masala. Stir everything well to ensure the spices coat the ingredients evenly.


• Cook the mixture on medium heat until the oil starts to separate from the masala. This process allows the flavors to intensify and gives the dish its rich taste.

• Now, add 1/4 cup of finely chopped mint leaves and 1/4 cup of coriander leaves to the mixture. Sauté the ingredients well until they release their aromatic flavors and blend seamlessly with the rest of the dish.

• Once the mint and coriander leaves curl up and release their flavors, add the sliced tomato to the mixture. Cook it well with the lid closed until it becomes completely mashed, creating a rich and flavorful base for the dish.

• Next, add 3 tbsp of curd to the mixture to impart a delightful sour taste to the chicken biryani. The curd also adds a richness to the rice, making it soft and flavorful. Mix the curd well with the rest of the ingredients and cook until the flavors are well combined.

Step 8

• Once the chicken is fully cooked and the masalas have infused their flavors, add 2 cups of water to the pan. Mix the water well with the chicken and bring it to a vigorous boil over high flame.

• As the water starts boiling, carefully add the soaked basmati rice to the pan. Lower the flame to the lowest setting to allow the rice to cook gently.

Step 9:

• After adding the water and basmati rice, gently mix everything together. Close the lid of the pan and place a heavy object on top to retain the steam and lock in the flavors.


• Cook the biryani on low flame for 10 to 15 minutes. During this time, the rice will absorb the water and become perfectly cooked.


• Once the water is completely absorbed and the rice is cooked, switch off the flame. Now, add 2 tbsp of ghee to the biryani along with some chopped coriander, enhancing its aroma and taste.

  • Now add the cleaned chicken pieces and give a good mix so that the masalas are coated well. Now cover and cook the chicken on medium flame.
    Make sure the chicken is completely cooked.
  • Once the chicken is done, add 2 cups of water, mix well and bring it to a boil on high flame.
    Once the water starts to boil, add the soaked basmati rice and bring the flame to low.
  • Mix everything gently and then close the lid and keep a heavy object to keep the steam and flavors intact.
    Cook on low flame for 10 to 15 minutes. Once the water is completely absorbed, switch off the flame and add 2 tbsp ghee along with some chopped coriander.
    Close the lid and rest the chicken biryani for 5 to 10 minutes before serving it hot with your favorite side dish.
