Easy coconut milk rice

How to make coconut milk rice
Step 1:
In a pan add 100ml of ghee
In medium flame, add 2 cinnamon and 2 bay leaf. Saute for a few seconds.




Step 2:
Next, add chopped onion and cook until translucent
Now, add chopped garlic and saute for a few seconds





Step 3:
Next, add 2 green chilli along with some coriander and mint leaves.
Cook for a minute.




Step 4:
Next, add chopped tomatoes and cook for a few seconds.


Step 5:
Now, add 4 cups of fresh coconut milk along with 1 tbsp salt. Mix well and bring it to a boil.





Step 6:
Next, add soaked rice and give a good mix.
Now again bring it to a boil.
Once it starts to boil, cover, and cook on low flame for 10 to 12 minutes.
Cook until the coconut milk is completely absorbed and serve hot







How to extract coconut milk for coconut rice
Take 4 coconut and tap around the middle of the coconut with a sharp instrument
Remove the white meat from inside
Chop up any pieces of coconut meat
Place the coconut meat in a blender and add 1/2 cup water



Step 2:
Blend the mixture until the coconut meat turns really fine
Strain the mixture using a strainer and then squeeze the rest of the milk out.

- 2 Cup Rice 1/2 kg

- 2 Green chilli
- Coriander leaves – little pinch
- Mint leaves – little pinch
- Salt 1 tbsp
