How to make coconut milk rice
Step 1:
• In a pan, add 100ml of ghee and place it over medium flame.
• Once the ghee is heated, add 2 cinnamon sticks and 2 bay leaves to the pan. Sauté the spices for a few seconds, allowing their aromatic flavors to infuse into the ghee.
Step 2:
• Next, add the chopped onion to the pan and cook it until it turns translucent, imparting a mild sweetness to the dish.
• Now, introduce the chopped garlic to the pan and sauté it for a few seconds, allowing its delightful aroma to fill the kitchen.
Step 3:
• Next, add 2 green chilies, along with a handful of fresh coriander and mint leaves, to the pan.
• Cook the mixture for a minute, allowing the flavors of the green chilies and the freshness of the herbs to infuse into the dish.
Step 4:
• Next, add the sliced tomatoes to the pan and cook them for a few seconds, allowing them to soften slightly and release their juices.
Step 5:
• Now, add 4 cups of fresh coconut milk to the pan, along with 1 tbsp of salt. Mix all the ingredients well, ensuring the salt is evenly distributed.
• Bring the mixture to a boil, allowing the flavors to meld and the coconut milk to infuse the dish with its rich and creamy texture.
Step 6:
• Next, add the soaked rice to the pan and give it a good mix, ensuring that the rice is well-coated with the flavorful coconut milk.
• Bring the mixture to a boil once again, allowing the rice to cook and absorb the rich coconut milk.
• Once it starts to boil, cover the pan, and let the dish cook on low flame for 10 to 12 minutes. This step ensures that the rice becomes tender and the coconut milk is completely absorbed.
• Cook the dish until the coconut milk is fully absorbed, leaving you with a delicious and aromatic rice dish.
• Serve the hot and flavorful coconut milk rice, ready to be savored and enjoyed.
How to extract coconut milk for coconut rice
• Take 4 coconuts and use a sharp instrument to tap around the middle of each coconut. This tapping will help in breaking open the coconut.
• Remove the white meat from inside the coconuts using a coconut scraper or knife. Ensure to collect all the coconut meat, discarding the outer shell.
• Chop up any large pieces of coconut meat into smaller chunks for easier blending.
• Place the chopped coconut meat in a blender and add 1/2 cup of water to it. This water will aid in blending the coconut meat into a smooth and creamy consistency.
Step 2:
• Blend the mixture in the blender until the coconut meat turns really fine, creating a smooth and creamy texture.
• Next, strain the blended mixture using a strainer to separate the coconut milk from any remaining solid particles.
• To ensure you extract all the milk, gently squeeze the coconut pulp in the strainer, allowing the remaining milk to pass through.

- 2 Cup Rice 1/2 kg
- 100 ml Ghee –

- 5 Chopped Garlic
- 4 Cups Coconut milk 1 litre
- 1 Medium Chopped onion
- 1 Medium Tomato
- 2 Green chilli
- Coriander leaves – little pinch
- Mint leaves – little pinch
- Salt 1 tbsp
Instructions

- Now, add 4 cups of fresh coconut milk along with 1 tbsp salt. Mix well and bring it to a boil.
- Next, add soaked rice and give a good mix.
- Now again bring it to a boil.
- Once it starts to boil, cover, and cook on low flame for 10 to 12 minutes.
- Cook until the coconut milk is completely absorbed and serve hot

- Place the coconut meat in a blender and add 1/2 cup water
- Blend the mixture until the coconut meat turns really fine
- Strain the mixture using a strainer and then squeeze the rest of the milk out.
