How to make peanut rice
Roasting peanut masala
Step 1:
• Lightly roast 1/4 cup of peanuts in a pan until they turn golden brown, releasing their nutty aroma.
• Once the peanuts are roasted, add 1 tbsp of sesame seeds, 2 tbsp of chana dal, and 1 tbsp of urad dal to the pan. Roast these ingredients for a few seconds to bring out their flavors.
• Now, introduce 6 to 7 Kashmiri chilies and 1 tsp of jeera (cumin seeds) to the mixture. Continue to roast them on low flame, allowing the spices to infuse the air with their delightful fragrance.
• Next, add cloves of garlic, grated coconut, and 1/4 tsp of hing (asafoetida) to the pan. Roast all the ingredients on low flame, creating a delectable blend of flavors.
Step 2:
• Now, add 1 small ball of tamarind, 1 strand of curry leaves, and 1/2 tsp of salt to the pan with the roasted spices.
• Continue to roast them well, ensuring that the tamarind softens, the curry leaves release their aroma, and the salt blends with the other ingredients.
Step 3:
• Once the roasted mixture is done, allow it to cool down before grinding it into a coarse powder. The cooling process ensures that the spices retain their flavors and aroma during grinding.
• Now, transfer the ground spice mixture into an airtight glass container. This will help preserve the freshness and potency of the spice blend for up to a month.
Cooking peanut rice
Step 1:
• In a kadai, heat 2 tbsp of oil over medium heat.
• As the oil warms up, add 1 tsp of mustard seeds to the kadai and wait for them to splutter and release their distinctive aroma.
Step 2:
• Next, add the following ingredients to the kadai:
2 tbsp chana dal
2 tbsp urad dal
2 tbsp peanuts
1 sprig of curry leaves
2 Kashmiri chillies
• Sauté the mixture, allowing the dals and peanuts to turn golden brown and the curry leaves to release their aroma.
Step 3:
• Finally, add the following ingredients to the kadai:
9 tsp of prepared peanut masala (the mixture you previously ground into a coarse powder)
1/4 tsp of turmeric
3/4 tsp of salt (or adjust to taste)
1/4 tsp of ground pepper
• Mix all the ingredients well with the tempering, ensuring that the flavors are evenly distributed.
Step 4:
• Sauté the mixture for a few seconds, allowing the flavors to meld.
• Now, add 4 cups of cooked rice to the kadai and mix it well with the tempered spice blend.
• Ensure all the ingredients are thoroughly combined, creating a delectable blend of flavors and textures.
• Your flavorful and aromatic peanut rice is now ready to be served hot and enjoyed to the fullest!

Ingredients
Dry roasting for peanut masala
- 1/4 Cup Peanuts
- 1 tsp Sesame seeds Optional
- 2 tbsp Chana dal
- 1 tbsp Urad dal
- 6 Cloves Garlic
- 6 to 7 Kashmiri chilli
- 1/4 Cup Grated coconut
- 1/2 tsp Jeera
- 1/4 tsp Hing
- Salt
- 1 small ball Tamarind
- 1 Strand Curry leaves
Making peanut rice
- 2 tbsp Sesame or gingelly oil
- 1 tsp Mustard seeds
- 2 tbsp Peanuts
- 1 Spring Curry leaves
- 2 Whole Kashmiri chilli
- 6 tsp Peanut masala
- 4 Cups Cooked rice
- 3/4 tsp Salt
- Pinch Turmeric
- 1/4 tsp Ground pepper
Instructions
Roasting peanut masala

- Now add 6 to 7 kashmiri chilli and add 1 tsp jeera

- Add 1 small ball of tamarind,1 strand of curry leaves, and 1/2 tsp salt. Roast them all well.
- Once done cool the mixture and grind it into a coarse powder.
- We can store this powder in an airtight glass container for a month
Cooking peanut rice
- In a kadai, add 2 tbsp oil and add 1 tsp mustard seeds and let it splatter
- Next, add 2 tbsp chana dal, urad dal, 2 tbsp peanuts, 1 spring of curry leaves, and 2 kashmiri chilli
- Finally, add 9 tsp of prepared peanut masala, 1/4 tsp turmeric, 3/4 tsp salt, 1/2 tsp salt, and 1/4 tsp ground pepper.
- Saute for a few seconds and then add 4 cups of cooked rice and mix well.
- Mix them all well and serve hot!
