In a frying pan add 3 tbsp of oil and allow it to warm up
Once the oil is warm, add chopped potatoes and saute for a couple of minutes
Next, add chopped onions to the potato and cook till onions become translucent.
Now, remove the cooked potatoes and onions from the pan. Retain the excess oil in the pan itself.
Next in a bowl beat 3 large eggs and add the cooked onions and potatoes. Along with it some salt and pepper.
Mix well and finally add some chopped coriander or parsley to it.
Now add this mixture to the frying pan and spread evenly.
Cook in low flame and occasionally spreading the potatoes
When the egg is 70 percent done, try to flip the egg using a plate(cover the pan with a plate and invert the pan placing the egg on the plate. Next slowly slide the inverted egg into the pan to cook the other side)
After a few seconds spanish omlette is ready to serve.
