In a kadai or pan add 2 tbsp oil and warm it up in high flame.
Once the oil is heated up, add the spices(2 Cinnamon,1 Dried kapok bud, 1 Bay leaf, and 2 Cardamom)
Next, add 2 cups of sliced onion and cook until translucent.
Next, add a spring of curry leaves.
Now, add 1 tsp of ginger garlic paste. Mix well and cook for a minute.
Next, add 1 1/2 cup sliced tomato and cook until the tomatoes arehalf cooked.
Now add 1/2 tsp of salt and cook till the tomatoes are completely cooked.
Next, add all the masalas(3/4 tsp red chilli powder, 1 tsp Coriander powder, 1/2 tsp Garam masala, and 1/4 tsp Cumin powder)
Mix and cook until the masala is completely cooked(Check for the oil releasing from the masala)
Next, add 1/4 cup capsicum and mix well to the masala.
Next, add 200 grams of sliced mushroom(2 cups).
Cover and cook the mushroom from the water it releases.
Finally, roast the mushroom masala until dry.
Check for the masala sticking to the mushroom. At this point remove it from the kadai/pan and serve hot.
Serve this masala with idli, dosa, chapathi, and with any variety of rice.
