Ingredients

  • 2 Cup Rice 1/2 kg
  • 100 ml Ghee -
  • 2 Cinnamon
  • 2 Bay leaf
  • 5 Chopped Garlic
  • 4 Cups Coconut milk 1 litre
  • 1 Medium Chopped onion
  • 1 Medium Tomato
  • 2 Green chilli
  • Coriander leaves - little pinch
  • Mint leaves - little pinch
  • Salt 1 tbsp

Instructions

  • In a pan add 100ml of ghee
  • In medium flame, add 2 cinnamon and 2 bay leaf. Saute for a few seconds.
  • Next, add chopped onion and cook until translucent
  • Now, add chopped garlic and saute for a few seconds
  • Next, add 2 green chilli along with some coriander and mint leaves.
  • Cook for a minute.
  • Next, add chopped tomatoes and cook for a few seconds.
  • Now, add 4 cups of fresh coconut milk along with 1 tbsp salt. Mix well and bring it to a boil.
  • Next, add soaked rice and give a good mix.
  • Now again bring it to a boil.
  • Once it starts to boil, cover, and cook on low flame for 10 to 12 minutes.
  • Cook until the coconut milk is completely absorbed and serve hot

How to extract coconut milk for coconut rice

  • Take 4 coconut and tap around the middle of the coconut with a sharp instrument
  • Remove the white meat from inside
  • Chop up any pieces of coconut meat 
  • Place the coconut meat in a blender and add 1/2 cup water
  • Blend the mixture until the coconut meat turns really fine
  • Strain the mixture using a strainer and then squeeze the rest of the milk out.
