Ingredients

  • 3 tbsp Oil
  • 1/2 tsp Mustard
  • 1/2 tsp Cumin
  • 1 tsp Chana dal
  • 1 tsp Urad dal
  • 2 tbsp Peanut
  • Curry leaves
  • 1/2 Cup Onion chopped 1- Medium
  • 1 Cup Brinjal
  • 1/4 tsp Turmeric powder
  • 1/2 Cup Tamarind extract
  • 1 tsp Salt
  • 3 tbsp vangi bath powder
  • 3 Cups Cooked rice

Instructions

  • In a kadai add 3 tsp oil and add 1/2 tsp Mustard, 1/2 tsp Cumin, 1 tsp Chana dal, 1 tsp Urad dal, 2 tbsp Peanut, and Curry leaves.
  • Saute for a few seconds along with a bay leaf.
  • Now add 1/2 Cup Onion chopped and saute until translucent.
  • Next, add 1 Cup Brinjal. Cover and cook for a minute.
  • Now add 1/4 tsp Turmeric powder and 1/2 Cup Tamarind extract.
  • Mix and cook for a few seconds along with 1 tsp salt.
  • Finally add 3 tbsp vangi bath powder and mix well.
  • Close and cook for another minute.
  • Now add 3 cups of boiled rice and mix well.
  • Once mixed well, serve hot!
