In a kadai add 3 tsp oil and add 1/2 tsp Mustard, 1/2 tsp Cumin, 1 tsp Chana dal, 1 tsp Urad dal, 2 tbsp Peanut, and Curry leaves.
Saute for a few seconds along with a bay leaf.
Now add 1/2 Cup Onion chopped and saute until translucent.
Next, add 1 Cup Brinjal. Cover and cook for a minute.
Now add 1/4 tsp Turmeric powder and 1/2 Cup Tamarind extract.
Mix and cook for a few seconds along with 1 tsp salt.
Finally add 3 tbsp vangi bath powder and mix well.
Close and cook for another minute.
Now add 3 cups of boiled rice and mix well.
Once mixed well, serve hot!
