One pot chicken rice recipe
Chicken rice is a flavorful and light lunch and dinner recipe, if you are looking for a lighter substitute to your trained craving buds. It tastes delicious in your mouth and lighter on your tummy.
In this chicken rice recipe, I have used very basic ingredients that are readily available in the kitchen. Like, Indian masalas and spices along with coconut milk to add that richness to the dish.

How to make simple one pot chicken rice recipe
Step 1: Marinating the chicken
Clean and wash the chicken before marination.
In a bowl add 1 tsp Red chilli powder, 1/2 tsp Salt, 1/4 tsp Turmeric powder, 1 tsp Ginger garlic paste, 2 tbsp Curd and mix it into a thick paste.
Add chicken to the paste, mix well and marinate for 30 minutes at the least.
Step 2: shallow fry the marinated chicken
Next, in a kadai add 3 tsp oil and add the marinated chicken to the kadai. Shallow fry the chicken on both the sides until light golden brown.
Once done, remove it from the kadai and place it on a clean plate.
Step 3:
In the same kadai, add 1/2 cup sliced onion and saute for a few seconds. Next add 2 sliced green chille and saute again for a few seconds.
Step 4:
Add 1/2 tsp Ginger garlic paste and 1 tsp Salt. Mix well and saute for a few seconds.
Step 5: Cooking the rice
To the masala add 1 Cup Coconut milk and 3/4 Cup Water. Mix well and bring it to a boil on high flame.
Step 6:
Once it starts boiling, lower the flame and add soaked basmati rice and mix well.
Next layer it with shallow fried chicken and chopped coriander leaves.
Step 7:
Cover a cook on low flame for 10 to 15 minutes until the water is completely absorbed.
Finally when the chicken rice is cooked, switch off the flame, fluff the rice from the corners and add some ghee.
Cover and allow it to sit for another 5 minutes before serving hot.

Equipment
- Pan/Kadai
Ingredients
Marinate chicken
- 1 tsp Red chilli powder
- 1/2 tsp Salt

- 2 tbsp Curd
- 300 Grams Boneless chicken
Frying the marinated chicken
- 3 tsp Oil
Masala for rice
- 1/2 Cup Sliced onion
- 1 Bay leaf
- 2 Green chilli Slit half vertically
- 1/2 tsp Ginger garlic paste
- 1 tsp Salt
Cooking the rice
- 1 Cup Coconut milk
- 3/4 Cup Water
- 1 Cup Soaked basmati rice
- Few Chopped coriander leaves
- 1/2 tsp Ghee
Instructions
