Raw mango chutney with jaggery
Raw mango chutney also called as green mango chutney is made from fresh raw mango. It is one of the most commonly adapted dish across India with a tint of change in flavor that resonates with each subregion. In this recipe we have tried out raw mango chutney Bengali style.
If you are new to this dish, be warned of its scrumptious sweet and spicy flavor as it observed to be compelling to almost everyone.
So to start with this raw mango chutney recipe, we require very few ingredients and with zero prep time. We only need to keep the raw mangoes cut vertically which requires less than a minute.
Raw mango chutney can also be treated as a delicious snacking option, but it is largely used as a side dish for breakfast and rice dishes.
So to start with the recipe, please follow the instructions given below
Raw mango chutney bengali style
Step 1:
Warm up 3 tsp of oil in a kadai /pan and add 1/2 tsp mustard seeds and wait for it to splutter.
Next, add 1 tsp cumin and saute for a few seconds until it becomes crisp.
Step 2:
Now add 1/2 Tsp Asafoetida/Hing to it and give it a good mix and then add 3 large green chilli roughly chopped. Mix well.
Step 3:
Add vertically sliced raw mango and mix well. cook for a few seconds before adding masalas.
Step 4:
Next, add 1 tsp red chilli powder, 1/2 tsp salt, and 1/2 tsp turmeric powder. Mix well and cook again for a few seconds so that masalas are coated well.
Step 5:
Now add a cup of and mix it well with the mixture. Close and cook until the raw mango softens.
Step 6:
Finally,add 1/8 cup jaggery and give it a good mix before cooking it to a thick paste like consistency.
Once the sauce thickens, switch off the flame and serve it hot or cool it down before having it as sides.

- Pan/Kadai
