Khushka or kuska is a rice dish made using long grain rice (usually basmati), ghee, and various spices. It is a vegetarian dish but does not involve any major vegetables other than onions and tomato which makes it simple and quick to cook. Tomatoes and onions are used to make the base of the gravy along with spices that add flavor to the dish.

It’s is served as a main dish, with Kurma or salna as sides and is very popular in Southern India.

How to make Kuska Rice Recipe | Plain Biryani Rice

Step 1:

Soak the basmati rice for 20 minutes before cooking

  • In a pan add 3 cups of water, spices, salt, and oil along with the soaked rice. Mix it well.
  • Boil the rice in medium flame till it is 90 percent cooked.
  • Once done, filter the excess water and keep the rice in a bowl

Step 2:

  • Heat the cooker, add oil to it
  • Now add all the whole spices and allow them to turn fragrant.
  • Next, add green chilli and saute well.

Step 3:

  • Add the onions and fry till they turn golden brown
  • Add the ginger-garlic paste and fry till the raw smell disappears.

Step 4:

  • Now add coriander and mint leaves. Mix well and cook till the leaves curl up.

Step 5:

  • Next, add the tomatoes and fry for 2-3 minutes.

Step 6:

Add the turmeric powder, red chili powder, coriander powder, and cook till oil is well separated on the sides of the pan

Step 7:

  • Add curd and let it cook for another minute and then add the boiled basmati rice and mix well
  • Close the lid and cook for 5 minutes in medium flame. Place a bowl full of water on top of the lid so that steam stays intact.
  • Switch off and open the lid and Kuska biryani is now ready to be served

Ingredients

For Basmati rice

  • 1/2 Cup Basmati rice
  • 3 Cups Water
  • 1 Bay leaf
  • 1 Cinnamon sticks
  • 1 Clove
  • 1 Cardamom
  • 1 tsp Oil
  • 1/2 tsp Salt

Kuska gravy

  • 1 tbsp Oil
  • 1 Bay leaf
  • 1 Clove
  • 1 Cinnamon
  • 1 dried Kapok bud
  • 1 Black stone flower
  • 1 Medium Onion
  • 1 Small Tomato
  • 1 Large Green chilli
  • 1/4 Cup Coriander leaves
  • 1/4 Cup Mint Leaves
  • 1 tsp ginger garlic paste
  • 1/2 tsp Red chilli powder
  • 1/2 tsp Coriander Powder
  • 1/4 tsp Turmeric powder
  • 1 tsp Curd
  • 1/2 tsp Salt
