Lemon rice, also known as chitranna and elumichai/lemon satham, is a beloved South Indian dish renowned for its distinctive sour taste derived from the tangy lemon juice. Its vibrant color and refreshing taste make it an appetizing and delightful addition to any meal. 


Preparing lemon rice is incredibly simple, as it only requires readily available seasonings from the kitchen and boiled rice.


The gentle sourness of the lemon juice, combined with the tantalizing aroma of the tempered seasonings, creates a flavorful dish that’s perfect for an afternoon meal. For added taste, it can be paired with pickle, curd/yogurt, or dry chutney.


Lemon rice holds a special place as the most common comfort food in South India and serves as an excellent and quick breakfast option using leftover rice from the previous day.


It’s also a popular choice for travel, as it remains fresh for long hours and serves as a perfect alternative to tamarind rice during journeys.

Equipment

  • Pan/pot

Ingredients

  • 1 Cup Boiled rice
  • 1 Small Lemon
  • 2 tbsp Oil
  • 1/2 tbsp Mustard seeds
  • 1 tbsp de-husked black lentils (ulutham paruppu/ urad dal)
  • few curry leaves
  • 2 Green chilies
  • Salt to taste
  • 1/4 tbsp Turmeric powder
  • 1/2 Cup Whole peanuts
  • Coriander Leaf for garnishing

Instructions

  • Heat oil in a pan and add mustard seeds and curry leaves, allow to splutter.
  • Now turn the stove to low flame and add Split Black gram, fry till golden.
  • Add peanuts, fry till brown.
  • Now add green chilies, salt and fry for 2 minutes
  • Add turmeric and mix well.
  • Take it off from the flame and add lemon juice and mix well.
  • Now add the boiled rice to the tempered mixture and mix well.
  • Garnish it with chopped coriander leaves.

Notes

Cooking Boiled rice:
  1. Clean and soak the rice for 30 minutes
  2. Then, take the pressure cooker and add two cups of water and little salt to it
  3. Now add the soaked rice to it
  4. Close the lid and switch on the stove and wait for 3 whistles
  5. Wait it no steam left and then open the lid
