Vegetable Pulao is a spicy and richly flavored dish that is perfect for your afternoon meal. It is prepared by adding cooked rice with vegetables of your choice and various spices.

The ingredients used are so simple and used every day, which makes it an easy and goto recipe for any occasion. The vegetables that are usually used are carrots, peas, beans, and potato but we can also mix and match our choice.

A few alternatives are cauliflower, beetroot, capsicum, etc., we can also add mushroom and meal maker according to our taste. Actually, it can have umpteen variations!

To add more taste to this delicious dish, eat it with cucumber raita or brinjal gravy

How to make simple veg pulao

Step 1:

Rinse the basmati rice till the water becomes clear. Then soak it in water for 20 minutes. After soaking, drain the rice and keep it ready

Take a pressure cooker that has a thick bottom and heat it with ghee or oil. Add the spices mentioned above and cook till the oil becomes fragrant

Step 2:

Add chopped green chili and onions and fry till golden brown, then add ginger garlic paste and saute them for few seconds

Add all the vegetables(green beans, carrot, capsicum, potato and tomatoes) and saute them for a few minutes

Step 4:

Add red chilli powder, turmeric, coriander powder, garam masala, and salt as per taste. Cook till you see the oil getting separated from the masala and veggies.

Step 5:

Now, turn the stove to low flame and add the soaked rice and stir well. Add water and close the lid.

Wait for three whistles/ If you are cooking in a pot, bring it to low flame and close the lid tightly and cook till the water is absorbed.

Switch off the stove and wait till all the steam is gone/ for pot keep the lid tightly closed for 5 to 8 minutes.

Open the lid and fluff the rice gently from the corners

Ingredients

Main Ingredients:

  • 2 tbsp Oil or ghee
  • 1/2 Cup Basmati rice
  • 1 Cup Water
  • 1 Small Green chilli
  • 2 tbsp Onion
  • 1 small Tomato
  • 2 tbsp Carrot
  • 2 tbsp Beans

  • 1 Star anise
  • 1 to 2 Cardamon
  • 1 tsp Cumin seeds/jeera
  • 1 Inch Cinnamon
  • Dried kapok bud
