This simple Vegetable Pulao is a spicy and richly flavored dish that is perfect for your afternoon meal. It is prepared by adding cooked rice with vegetables of your choice and various spices.
The ingredients used to make spicy veg pulao is so simple and used every day, which makes it an easy and goto recipe for any occasion. The vegetables that are usually used are carrots, peas, beans, and potato but we can also mix and match our choice.
A few alternatives are cauliflower, beetroot, capsicum, etc., we can also add mushroom and meal maker according to our taste. Actually, it can have umpteen variations!
To add more taste to this delicious dish, eat it with cucumber raita or brinjal gravy
How to make simple veg pulao
Step 1:
Rinse the basmati rice till the water becomes clear. Then soak it in water for 20 minutes. After soaking, drain the rice and keep it ready
Take a pressure cooker that has a thick bottom and heat it with ghee or oil. Add the spices mentioned above and cook till the oil becomes fragrant





Step 2:
Add 1/2 cup onions and fry until the onions are soft.
Next, add 2 to 4 green chilli and saute for a second.
Now, add ginger-garlic paste and saute them for few seconds







Step 3:
Add all the vegetables(green beans, carrot) and saute them for a few minutes




Step 4:
Now add 3/4 salt and saute well.
Next, add boiled green peas and mix well.




Step 5:
Now add 2 cups of water, mix well and bring it to boil n high flame.
Once the mixture starts boiling add the soaked basmati rice and mix it gently. Now, wait for it to boil again.
Next, bring the flame to low and cover the cooker with a plate. On top of it place a bowl of water so that the steam is intact.
Cook for 7 to 9 minutes in low flame until the water is completely absorbed.
After 9 minutes, remove the bowl and plate.
Fluff the rice gently from the corners









Veg pulao is ready!

Vegetable biryani and vegetable pulao are two different dishes!!!! yes! That’s right, they are not the same! Biriyani is a very rich aromatic dish compared to pulao and they both use a very different cooking technique.
